Quick and Easy Pizza Recipe
How Easy Is This Store Cupboard Pizza?
When I need a good tasty snack, or meal, in a hurry, I always turn to making a quick and easy pizza, using a naan bread or a flatbread as a base. When I am out shopping I'll pick up some vacuum-packed naan breads - these have a shelf-life of 2-3 months and are very cheap to pick up.
It's then simply a case of opening the fridge to see what I've got in there to use. Below is a typical easy pizza recipe I'd use:

Cook Time
Ingredients
- 1-2 naan breads, (or flatbreads)
- 3-4 tablespoons tomato ketchup
- 1 teaspoon chilli powder
- A handful grated cheese, (any cheese you have)
- 1 onion, (white or red)
Toppings of Your Choice
You can add any other toppings you have, or like, I've used any combination of:
- A fresh chilli pepper
- A tin of tuna
- Sweetcorn
- Red/green/yellow bell peppers
- Pepperoni
You can also finish the pizza off with a handful of herbs, or some flavoured oils.
- Turn the oven on to warm up, to about 190 degrees Centigrade, 375 degrees Fahrenheit, Gas Mark 5.
- Mix up the tomato ketchup with the chilli powder in a small pot. Adjust the amount of chilli powder to your own taste.
- Using a teaspoon, spread the tomato ketchup base across the naan bread - spoon it on, then use the back of the spoon to spread it to the edges.
- Chop the onions, tomatoes and any other ingredients you've got and place these on top
- Top the pizzas with the grated cheese.
- Additional: You can sprinkle herbs or oil on top of your pizza if that's how you usually have it cooked at a pizza shop.
- Once the oven is hot, place your naan pizzas into the oven and cook for 10-15 minutes, depending how well browned you like it.
- Remove the pizza from the oven, cut into pieces, serve immediately.
Naan Bread Bases
I like to use a garlic and coriander naan bread as a pizza base, but a regular, plain naan bread will do.
There are a variety of different naan breads available in shops, so keep an eye out for some unusual ones to give your easy pizza little extra lift!
This is a very flexible recipe, using your leftovers and store cupboard ingredients. I always make sure I have tomato ketchup in, which I then mix with chilli powder to make my tomato base - this works out cheaper than buying a chilli/tomato sauce.
I always have cheese in the fridge too.
The rest simply depends on what I've got available - the day I took these photos I was out of onions, hence no onion!
This pizza is perfect hot or cold.
Quick Picnic Food
Make up a couple of these pizzas, allow them to cool - then pack them up for a picnic.
Packed Lunch
One of these easy pizzas makes a great packed lunch to take to school or work.
Storage:
Once cooked, allow the pizza to cool and it can be kept in an airtight box in the fridge for 3-4 days.
Freeze:
You can freeze the pizza - simply cool it, wrap it in a freezer container or paper, then freeze. Use within 3 months for maximum taste. To reheat, defrost and then simply place in a hot oven for 4-5 minutes.
