Quick & Easy Microwave Flapjacks Recipe on a Budget

I love this cheap, quick and easy microwave flapjack recipe. It produces soft, moist flapjacks in under 10 minutes (plus the cooling/setting time) with a minimum of effort and mess! It's great that you don't have to heat up the oven, so it's energy saving too!
Ingredients
- 4oz (100g) butter
- 1oz (25g) caster sugar
- 4 tablespoons golden syrup
- 7oz (200g) oats
- 5oz (150g) chocolate (or anything you want in the flapjacks, such as raisins, sultanas, cherries, fruit)

Method
- I use a 1 pint pyrex jug for this as it means there's only one item to wash up.
- Melt the butter and sugar together in the microwave (just keep microwaving and stirring it for 15 sconds or so at a time for a couple of minutes).
- Stir in the golden syrup (I use the squirty bottles as I find these easier than a tin.
- Stir in the oats.
- Microwave the whole mix on high for about 3 minutes. During this time the whole lot will grow in volume in the microwave (a 1 pint jug will contain it all).
- If you have any other ingredients you want to add to the flapjacks, then stir these into the mixture now.
- Lightly grease a baking dish.

And to Finish Your Flapjacks
- Break the chocolate into small pieces in a small microwavable pot and melt the chocolate by microwaving it for 15-20 seconds at a time and stirring.
- Spoon the flapjack mixture into the baking dish making it as thick as you want (or depending how big your dish is). Flatten the mixture down so it's neat.
- Pour the chocolate over the top, or drizzle it over the top.
- Leave the flapjack to one side to set, once it's cooled you can put it in the refrigerator. Once set, cut into squares.
- Serve!
Tip: Use a silicone cake dish to make the flapjacks in - food doesn't stick to silicone, so it's really easy to remove it from the dish, with no greasing required. I've also used silicone muffin trays to make individual flapjacks, ideal as lunch-box treats.

.. And Finally ...
It's difficult to tell you how many flapjacks this will make as it partly depends how thick you want them, but it's so easy to make that if there aren't enough, you can quickly whip up another batch! This mix should make enough for an 8" round or square tin though.
What I like to do is make one large amount and a couple of individual portions in muffin trays too. The individual portions will set a bit quicker and keep me from demolishing the whole of the main batch in one greedy session.

I didn't have any golden syrup so I used honey and they still tasted really good! Great recipe :)
I find the cheaper own brand oats have a better texture than the more expensive name brands.This recipe is a great shortcut, nice one.

I did'nt know you could make flapjacks in the microwave, wow and they look so yummy too! I will have to try this one.
