Microwave Sponge Cake in a Flash

Ingredients

  • 1/4 cup butter
  • 1/4 cup white sugar
  • 1/2 cup self raising flour
  • 1 egg
  • 2 tablespoons milk

Method

  1. Cream the butter and sugar together, gradually add milk and egg.
  2. Sift in the flour, fold in gently
  3. Place the mix in a microwavable dish of about 1 pint capacity
  4. Put your cake in the microwave on full power for about 3½ minutes


Serving Suggestion

Eat your hot microwave sponge cake before anybody else knows you made it!

The great thing about microwave cooking is it's instant gratification. If you're in a hurry, tired, just got in home late from work, then to nuke a meal is probably all you can manage! This is great comfort food too. Food with a feel-good factor, created from scratch, yet delivered to your plate in under 10 minutes is a great reason to buy a microwave in my opinion.

Baking Tip: Use Silicone Dishes

I now use silicone baking trays for making cakes and bread. They're much easier to store and to wash up. Also, you don't have to grease them as your cakes and bread won't stick. Silicone bakeware dishes are microwave safe, dishwasher safe, oven safe and freezer safe... I find them brilliant.

Just made this after really wanted a cake type snack at 9pm and it was lovely, my husband and I enjoyed it loads. Will def be making more and will be experimenting with flavours etc :D

nooooooooooooooooo. not good. oven baking is the only way. it came out slightly anemic, plasticy and kinda like a omlette....should it really curve under the weight of a knife??

Try again Jay ...  maybe you were unlucky.  It might also be to do with: the wattage of your microwave, the shape of your dish and how little/much you mixed it. 

You should be quite gentle when doing the mixing part, folding the flour in gently.

Yes, microwave cooking shouldn't be seen as the poor relation of oven cooking. With a bit of practice, tweaking and refining you can quite often produce better results than in an oven - and in a fraction of the time!

if i were to use all purpose flour instead of self raising, should i add baking powder? if yes, how much ?

To Can't Bake: You should add about 1/2 tsp of baking soda when using all purpose flour.

To kick it up a notch, add a little lemon juice to the batter (1/2 tsp). And to really step it up, reduce a couple TBS. of Black Cherry preserve with 1/4 cup of red wine and then drizzle over the cake - it soaks in beautifully :)

Could you use All-Purpose flour instead of Self-rising ?

All purpose flour, as it is known in the US, is called plain flour in the UK. Self-raising flour is different and includes a raising agent. If using all purpose flour, or plain flour, then you'd need to add in a half teaspoon or so of baking powder - or a raising agent.

Having said that, if you've nothing like that at all and you're hungry - why not just give it a go and accept it'll just be a bit flatter/stodgier than if you had the right flour .... with lashings of treacle or jam - and possibly topped with custard, I'm sure it'd be just as tasty if you're hungry :)

Absolutely delicious. i was worried it would turn out gooey or sticky but it was fantastic! the cake literally tasted like oven-cooked cake, crumbly, soft and bouncy. So quick and so easy!!

thank god i used quite a deep dish to cook the mixture in because the mixture rises double its original amount!!

This quick & easy microwave cake will serve 1-2, it really depends how hungry you are.

It's only one egg and half a cup of flour, so it's not massive.

It's an ideal quick & easy microwave cake for somebody living alone, or who has a friend that's popped round for coffee! Certainly not birthday cake sized, for a party.

But play around with it, double the ingredients, try things out - see what you can make of it for your own needs.

3.Place the jam/syrup into the bottom of the microwave dish of about 1 pint capacity.

4.Place the mix in a microwavable dish.

5.Put your cake in the microwave on full power for about 3½ minutes

Omg it worked so well. It was light and fluffy and yummy. Added 1/2 tbsp of vanilla & i forgot i didn't have any jam in the house so drizzled some honey over it and my god it was good.

Definitely adding this to my list.

Just made it, didnt see the comment about baking soda if u use all purpose flour, but i'll try it next time...it looks good enough, it's the first time i make a cake from scratch using the microwave, and im just glad the top bit didnt burn like it does in normal ovens!! waiting for it to cool down to have a taste...
